No-Bake Peach Split Cake

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cream Cheese Layer:

8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
For the Peach Layer:

2 cups fresh peaches, peeled and sliced (or canned peaches, drained)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
For the Topping:

Whipped cream (optional)
Sliced peaches for garnish
Mint leaves for garnish (optional)
Instructions:

Make the Crust:
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Place in the refrigerator to set while you prepare the filling.
Prepare the Cream Cheese Layer:
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble the Cake:
Spread the cream cheese mixture evenly over the prepared crust in the springform pan. Smooth the top with a spatula.
Place the cake in the refrigerator to set while you prepare the peach layer.
Prepare the Peach Layer:
In a saucepan over medium heat, combine the sliced peaches, granulated sugar, and lemon juice. Cook until the peaches start to soften (about 5-7 minutes). If you want a thicker topping, add the cornstarch mixture and cook for an additional minute until thickened. Remove from heat and let cool.
Top the Cake:
Once the peach mixture has cooled, pour it over the cream cheese layer in the springform pan. Spread it evenly.
Chill:
Cover the cake and refrigerate for at least 4 hours or until set (overnight is best).
Serve:
Once set, remove the cake from the springform pan. Top with whipped cream, sliced peaches, and mint leaves if desired.
