Philly Cheesesteak Sliders

Ingredients

For the Filling:

  • 1½ lb ribeye steak (or sirloin), thinly sliced

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 large onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 8 oz cremini mushrooms, thinly sliced (optional)

  • 3 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

For the Sliders:

  • 12 slider buns (Hawaiian rolls or potato rolls)

  • 12 slices provolone cheese (or white American cheese)

  • 4 tablespoons butter, melted

  • ½ teaspoon garlic powder (for butter brush)

  • ½ teaspoon dried parsley (optional)

Optional Toppings:

  • Mayo

  • Ketchup

  • Hot sauce

  • Sautéed jalapeños


Instructions

Step 1: Prep the Steak

Place the ribeye in the freezer for 20-30 minutes before slicing — this makes it much easier to cut paper-thin slices. Slice against the grain as thinly as possible. If you can find shaved steak at the grocery store, even better.

Step 2: Cook the Vegetables

Heat 1 tablespoon of olive oil in a large skillet or flat-top griddle over medium-high heat. Add the sliced onions, bell peppers, and mushrooms (if using). Cook for 5-6 minutes until softened and lightly charred. Add the minced garlic and cook for 1 more minute. Transfer vegetables to a plate and set aside.

Step 3: Cook the Steak

In the same skillet, add 1 tablespoon of butter. Increase heat to high. Add the thinly sliced steak in a single layer (work in batches if needed). Season with salt, pepper, and garlic powder. Cook for 2-3 minutes without stirring too much, allowing the meat to develop a nice sear. Flip and cook for another 1-2 minutes until browned and cooked through.

Step 4: Combine Filling

Return the cooked vegetables to the skillet with the steak. Stir everything together over high heat for 1 minute. Turn off the heat.

Step 5: Preheat Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Step 6: Prepare the Buns

Without separating the individual rolls, slice the entire block of 12 slider buns horizontally in half (like a top and bottom half). Place the bottom half of the buns into the prepared baking dish.

Step 7: Assemble the Sliders

Layer half of the provolone cheese slices over the bottom buns. Spread the steak and vegetable mixture evenly over the cheese. Top with the remaining provolone cheese slices. Place the top half of the buns over the cheese.

Step 8: Butter the Tops

In a small bowl, mix the melted butter with ½ teaspoon of garlic powder and dried parsley (if using). Brush the butter mixture generously over the tops of the buns.

Step 9: Bake

Cover the baking dish with aluminum foil and bake for 10 minutes. Remove the foil and bake for an additional 5-7 minutes until the tops are golden brown and the cheese is fully melted.

Step 10: Serve

Let the sliders rest for 2-3 minutes before slicing them apart. Serve warm with your favorite toppings like mayo, ketchup, or hot sauce.
