– 2 eggs
– 100ml heavy cream (thick or liquid)
– 1 tablespoon olive oil (for cooking the spinach)
– Salt and pepper (to taste)
– 1 pinch of nutmeg (optional, for extra flavor)
Preparation Steps:
1. Prepare the Spinach:
– If using fresh spinach, wash it carefully. In a large skillet, heat a tablespoon of olive oil and sauté the spinach over medium heat. If using frozen spinach, thaw it and drain well.
– Cook the spinach until it’s tender and excess water has evaporated. Season with salt and pepper to taste. Set aside.
2. Prepare the Filling:
– In a bowl, beat the eggs with the heavy cream. Add the cooked spinach, grated cheese, and lardons (if using). Mix well and season with salt, pepper, and a pinch of nutmeg if desired.
