Ingredients:
– 4 large eggs
– ½ cup cottage cheese
– ¼ cup shredded cheddar cheese (or cheese of choice)
– ¼ cup diced bell peppers
– ¼ cup chopped spinach
– ¼ teaspoon salt
– ¼ teaspoon black pepper
– ¼ teaspoon garlic powder
Instructions:
– Preheat Oven: Set oven to 350°F (175°C). Lightly grease a muffin tin.
– Blend Eggs & Cottage Cheese: In a blender, mix eggs and cottage cheese until smooth and frothy.
– Add Ingredients: Pour the mixture into a bowl and stir in cheese, bell peppers, spinach, salt, pepper, and garlic powder.
– Fill Muffin Tin: Divide mixture evenly among muffin cups, filling each about ¾ full.
– Bake: Bake for 20-25 minutes, or until set and lightly golden on top.
– Cool & Serve: Let cool slightly before removing. Enjoy warm or store for later!
