Ingredients:
2 cups cooked chicken, finely chopped or shredded
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup all-purpose flour
1/4 cup mayonnaise
Directions:
1. In a large bowl, combine the chopped chicken, mozzarella cheese, Parmesan cheese, eggs, flour, and mayonnaise. Mix well until all ingredients are fully combined.
2. Heat a non-stick skillet over medium heat and add oil.
3. Drop spoonfuls of the chicken mixture into the skillet, flattening them slightly.
4. Cook for 3-4 minutes on each side or until golden and cooked through.
5. Transfer to a paper towel to drain excess oil and serve warm.
