Ingredients:
2-3 ribeye steaks (1 to 1.5 inches thick)
2 tbsp olive oil
1 tbsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika (optional)
1 tbsp unsalted butter (per steak)
Fresh rosemary or thyme (optional)
Instructions:
Prep the Steaks:
Pat the steaks dry with a paper towel.
Rub with olive oil, then season generously with salt, black pepper, garlic powder, and smoked paprika. Let them rest at room temperature for 30 minutes before grilling.
Heat the Grill:
Preheat your grill to high heat (450-500°F).
Grill the Steaks:
Place the steaks on the hot grill and sear for 3-4 minutes per side for medium-rare.
For medium, grill for about 5-6 minutes per side.
Use a meat thermometer:
125°F for rare
135°F for medium-rare
145°F for medium
Butter Baste (Optional):
In the last minute, place a pat of butter and a sprig of rosemary on top of each steak for extra flavor.
Rest & Serve:
Let the steaks rest for 5-10 minutes before slicing to keep the juices inside.
Serve with your favorite sides like mashed potatoes or grilled veggies.
