Ingredients:
4 cod fillets (6 oz each), patted dry
2 tbsp olive oil
Kosher salt and freshly ground black pepper
4 tbsp unsalted butter
Juice of 1 lemon
2 tbsp finely chopped fresh herbs (parsley, dill, or tarragon)
Directions:
1. Pat cod fillets dry, season with salt, pepper, and fresh herbs.
2. Heat olive oil in a skillet over medium-high heat until shimmering.
3. Sear fillets for 4-5 minutes per side until opaque and flaky. Set aside.
4. Lower heat, melt butter in the skillet, stir in lemon juice, and herbs. Season as needed.
5. Pour sauce over cod and serve garnished with extra herbs.
