Cheesy Mashed Potato Puffs 

Ingredients:

 

2 cups mashed potatoes (leftover or freshly made)

 

1 cup shredded cheddar cheese

 

¼ cup grated Parmesan cheese

 

2 large eggs

 

¼ cup milk

 

2 green onions, chopped

 

Salt and pepper to taste

 

½ teaspoon garlic powder

 

½ teaspoon smoked paprika (optional)

 

Instructions:

 

1. Preheat the Oven:

Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.

 

2. Prepare the Mixture:

In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, garlic powder, smoked paprika, salt, and pepper. Stir until smooth and well combined.

 

3. Fill the Muffin Tin:

Spoon the mixture into the greased muffin tin, filling each cup about three-quarters full.

 

4. Bake to Perfection:

Bake for 20-25 minutes, or until the tops are golden brown and set.

 

5. Serve and Enjoy:

Let the puffs cool slightly before removing them from the muffin tin. Serve warm and enjoy their cheesy, fluffy goodness!
