Savory Mashed Potato Muffins
Ingredients:
– 2 cups mashed potatoes
– 2 eggs
– 1/2 cup shredded cheddar
– 1/4 cup grated Parmesan
– 1/4 cup milk
– 1/4 cup chopped chives or green onions
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– Salt & pepper to taste
– Optional: 1/4 cup diced bacon or ham
Directions:
1. Preheat oven to 375°F (190°C). Grease a muffin tin.
2. Combine all ingredients in a large bowl, mixing until smooth.
3. Spoon the mixture into the muffin tin, filling each about 3/4 full.
4. Bake for 20-25 minutes, until golden brown.
