Shepherd’s Beef Pie
Ingredients
For the Filling:
1 lb (450 g) ground beef
1 onion, finely chopped
2 garlic cloves, minced
2 cups mixed frozen vegetables (peas, carrots, corn)
1/4 cup beef broth
1 tbsp Worcestershire sauce
2 tbsp tomato paste
1 tsp dried thyme
Salt and pepper to taste
For the Topping:
4 cups mashed potatoes (prepared in advance)
2 tbsp butter (for garnish)
Instructions
1. Cook the Beef:
In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
2. Prepare the Filling:
Add the chopped onion and minced garlic to the skillet and sauté for 2–3 minutes until softened.
Stir in the frozen vegetables, beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper.
Simmer for 5–7 minutes until the vegetables are tender and most of the liquid is absorbed.
3. Assemble the Pie:
Transfer the beef and vegetable mixture into a 9×13-inch baking dish.
Evenly spread the prepared mashed potatoes over the filling, smoothing the top with a spatula.
4. Bake:
Dot the mashed potatoes with butter.
Preheat the oven to 375°F (190°C) and bake for 20–25 minutes, or until the top is golden brown and the edges are bubbling.
5. Serve:
Let the pie rest for 5 minutes before serving.
