Ingredients:
– 1 sheet of puff pastry (thawed)
– 1 8 oz package of cream cheese, softened
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/2 cup raspberry jam or preserves
– Fresh raspberries (optional, for garnish)
– Powdered sugar (optional, for dusting)
Directions:
1. Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper.
2. On a lightly floured surface, roll out the thawed puff pastry sheet to eliminate any creases. Cut it into 12 equal squares and arrange them on the prepared baking sheet.
3. In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until the mixture is smooth and creamy.
4. In the center of each puff pastry square, place a teaspoon of the cream cheese mixture. Add a small dollop (about 1/2 teaspoon) of raspberry jam on top of each cream cheese filling.
5. Gently fold the corners of each pastry square toward the center and press them lightly to seal.
6. Bake the pastries in the preheated oven for 15-18 minutes, or until they turn golden brown and puff up nicely.
7. Allow the pastries to cool on a wire rack. Optionally, garnish with fresh raspberries and dust with powdered sugar before serving.
