Ingredients:
1.5 lbs large shrimp (peeled and deveined)
2 tbsp olive oil
2 tsp chipotle chili powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp ground cumin
Salt and black pepper to taste
Juice of 1 lime
Skewers (if using wooden, soak them in water for 30 minutes)
Instructions:
Season the Shrimp:
In a bowl, combine olive oil, chipotle powder, paprika, garlic powder, onion powder, cumin, lime juice, salt, and pepper. Add shrimp and toss to coat evenly. Let marinate for 15–30 minutes.
Grill the Shrimp:
Preheat grill to medium-high heat. Thread shrimp onto skewers and grill for 2–3 minutes per side, or until pink and slightly charred.
Chipotle Ranch Dipping Sauce
Ingredients:
½ cup sour cream
¼ cup mayonnaise
1 tbsp fresh lime juice
1–2 tsp adobo sauce (from canned chipotles in adobo)
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
1 tbsp chopped fresh cilantro (optional)
Instructions:
Whisk all ingredients in a bowl until smooth. Chill for 15 minutes before serving.
Serve With:
Fresh lime wedges and extra sauce on the side.
