Ingredients

For the Cowboy Butter Sauce:

  • 3 cloves garlic, minced

  • 1 tbsp Dijon mustard

  • Juice and zest of ½ lemon

  • 1 tsp hot sauce (like Tabasco or your favorite brand)

  • ½ tsp crushed red pepper flakes (adjust to taste)

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh chives or green onions

  • 1 tsp smoked paprika

  • Salt and black pepper, to taste

For the Chicken & Pasta:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 8 oz linguine pasta

  • ½ cup heavy cream (or half-and-half for a lighter version)

  • ½ cup grated Parmesan cheese

  • Extra chopped parsley and lemon wedges, for serving


Instructions

  1. Cook the Pasta

    • Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Drain, reserving ½ cup of pasta water.

  2. Cook the Chicken

    • In a large skillet, heat olive oil over medium-high heat.

    • Season chicken with salt and pepper, then sauté until golden brown and cooked through (about 5–6 minutes). Remove and set aside.

  3. Make the Cowboy Butter Sauce

    • In the same skillet, reduce heat to medium and melt the butter.

    • Add garlic and cook for 30 seconds until fragrant.

    • Stir in Dijon mustard, lemon juice and zest, hot sauce, red pepper flakes, paprika, parsley, and chives. Mix until combined.
