FLUFFY CUPCAKES

 

 

Ingredients:

• 2 eggs

• 1/2 cup sugar

• 1/4 cup vegetable oil or melted butter

• 1/2 cup milk

• 1 tsp vanilla extract

• 1 cup all-purpose flour

• 1 tsp baking powder

• Pinch of salt

 

Instructions:

1. Preheat oven to 350°F (175°C) and line a cupcake tray with liners.

2. In a bowl, whisk together eggs and sugar until pale and frothy.

3. Add oil (or butter), milk, and vanilla extract. Mix well.

4. Sift in flour, baking powder, and a pinch of salt. Gently fold until just combined (do not overmix).

5. Fill cupcake liners 2/3 full with the batter.

6. Bake for 12–15 minutes or until the tops are golden brown and a toothpick inserted comes out clean.

7. Let cool slightly and enjoy!

 

Optional:

• Dust with powdered sugar or add a light cream topping for extra flavor.
