Ingredients:
4-5 medium apples (such as Granny Smith, Honeycrisp, or Fuji), peeled, cored, and diced
1 cup dried cranberries
1/2 cup chopped pecans or walnuts
1/4 cup chopped celery (optional)
1/4 cup mayonnaise
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/8 teaspoon ground cinnamon (optional)
Instructions:
Combine Ingredients: In a large bowl, combine diced apples, dried cranberries, chopped pecans (or walnuts), and celery (if using).
Make the Dressing: In a small bowl, whisk together mayonnaise, honey, lemon juice, vanilla extract, salt, and cinnamon (if using).
Toss: Pour the dressing over the apple mixture and toss to coat evenly.
Chill: Cover and refrigerate for at least 30 minutes, or until chilled.
Serve: Serve chilled.
Tips:
For a sweeter salad, increase the amount of honey.
