Ingredients:
5 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup shortening
2 teaspoons active dry yeast
1/4 cup warm water (about 110°F)
2 cups buttermilk
Directions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Using a pastry blender or two forks, cut in the cold butter and shortening until the mixture resembles coarse crumbs.
In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
Add the frothy yeast mixture and buttermilk to the flour mixture. Stir gently until the dough comes together.
Turn the dough out onto a floured surface and knead gently 3 to 4 times to ensure all ingredients are evenly combined.
Roll the dough to a 1-inch thickness and use a biscuit cutter to cut out biscuits. Re-roll scraps as needed.
Place the biscuits on a baking sheet, leaving a little space between them. Cover with a clean kitchen towel and let rise in a warm place for 30 minutes.
Preheat your oven to 400°F (200°C).
Bake the biscuits for 15-20 minutes, or until they are golden brown on top.
Serve warm with butter, honey, or your favorite spread.
