Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 2 cups cooked chicken, shredded

  • ¾ cup pearl barley

  • 6 cups chicken broth

  • 1 cup water

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • ½ teaspoon black pepper

  • 1 teaspoon salt (adjust to taste)

  • 1 bay leaf


Instructions

Step 1: Sauté Vegetables

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, carrots, and celery. Cook 4–5 minutes until softened.

  3. Stir in garlic and cook 30 seconds.

Step 2: Build the Soup

  1. Add shredded chicken, barley, broth, water, and seasonings.

  2. Stir well and bring to a boil.

Step 3: Simmer

  1. Reduce heat and cover.

  2. Simmer for 35–45 minutes until barley is tender.

  3. Remove bay leaf before serving.

Serve hot with crusty bread or crackers.
