Chicken Parmesan
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 ½ cups breadcrumbs (preferably Italian-style)
1 cup grated Parmesan cheese
1 cup marinara sauce
2 cups shredded mozzarella cheese
1 tbsp olive oil
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
Instructions:
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
In one shallow bowl, place the flour. In another, beat the eggs. In a third bowl, combine the breadcrumbs and Parmesan cheese.
Dredge each chicken breast in flour, then dip in the beaten eggs, and coat with the breadcrumb mixture, pressing gently to ensure the crumbs stick.
Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes per side, until golden brown and crispy. Remove from the skillet and place them in a clear glass baking dish.
Spoon marinara sauce over each piece of chicken, then top with shredded mozzarella cheese.
Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Garnish with fresh parsley and serve with pasta or a side of your choice. Enjoy your comforting Chicken Parmesan!
