Savory Garlic Mushroom Chicken with Spinach

📝 Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt & black pepper (to taste)
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic (minced)
  • 250g mushrooms (sliced)
  • 2 cups fresh spinach
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

👨‍🍳 Instructions:

  1. Season & sear the chicken
    Season chicken with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  2. Cook the mushrooms
    In the same pan, melt butter. Add mushrooms and cook until browned (about 5–7 minutes).
  3. Add garlic & spinach
    Stir in garlic and cook for 1 minute until fragrant. Add spinach and cook until wilted.
  4. Make the creamy sauce
    Pour in chicken broth, scraping the pan for flavor. Add cream, Parmesan, and Italian seasoning. Simmer for 3–5 minutes until slightly thickened.
  5. Combine & finish
    Return chicken to the pan. Spoon sauce over and simmer for another 2–3 minutes.

  • Serve over pasta, rice, or mashed potatoes
  • Pair with crusty bread to soak up the sauce
  • Add a squeeze of lemon for brightness

  • Swap cream for half-and-half for a lighter version
  • Add chili flakes if you like a little heat
  • Use thighs instead of breasts for juicier meat
