Savory Garlic Mushroom Chicken with Spinach
📝 Ingredients:
- 2 boneless, skinless chicken breasts
- Salt & black pepper (to taste)
- 1 tsp paprika
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic (minced)
- 250g mushrooms (sliced)
- 2 cups fresh spinach
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 tsp Italian seasoning
👨🍳 Instructions:
- Season & sear the chicken
Season chicken with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside. - Cook the mushrooms
In the same pan, melt butter. Add mushrooms and cook until browned (about 5–7 minutes). - Add garlic & spinach
Stir in garlic and cook for 1 minute until fragrant. Add spinach and cook until wilted. - Make the creamy sauce
Pour in chicken broth, scraping the pan for flavor. Add cream, Parmesan, and Italian seasoning. Simmer for 3–5 minutes until slightly thickened. - Combine & finish
Return chicken to the pan. Spoon sauce over and simmer for another 2–3 minutes.
