Coca-Cola Marinated Pork Loin

Marinating meat in soda might sound unusual at first—but once you try it with Coca-Cola, you’ll understand why this Southern-inspired trick has been passed down in many kitchens. The combination of Coke, garlic, mustard, brown sugar, and herbs creates a pork loin that’s sweet, tangy, ultra-tender, and coated in a gorgeous caramelized crust.

This recipe transforms an affordable cut of pork into a mouthwatering centerpiece perfect for Sunday suppers, holidays, or even a weeknight treat. The secret? A 24-hour soak in a cola-based marinade that tenderizes the meat, infuses it with layers of flavor, and helps create that irresistible lacquered finish when roasted.

Why This Recipe Works

  • Tenderizing Power of Coke – The acidity in Coca-Cola gently breaks down the pork, keeping it juicy.

  • Triple-Duty Marinade – Infuses flavor, tenderizes the meat, and creates a caramelized crust.

  • Basting Sauce Boost – Halfway through roasting, a syrupy Coca-Cola glaze adds shine, sweetness, and tang.

Ingredients

For the Marinade

  • 1 cup Coca-Cola

  • ¼ cup soy sauce

  • 3 tbsp vegetable oil

  • 2 tbsp Dijon mustard

  • ⅓ cup ketchup

  • 2 tbsp Worcestershire sauce

  • 1 tbsp dry mustard

  • 2 tsp minced garlic

  • 1 tsp ground ginger

  • 2 tbsp balsamic vinegar

  • 1 tsp dried thyme

  • 1 pork loin roast (3–5 lbs)

For the Cola Sauce

  • 1 tbsp cornstarch

  • 1 cup brown sugar

  • 2 tbsp butter

  • ½ tsp dry mustard

  • ⅔ cup Coca-Cola

  • ⅓ cup balsamic vinegar

  • Salt & pepper, to taste

Instructions

Step 1 – Marinate the Pork

In a large bowl, whisk together Coca-Cola, soy sauce, vegetable oil, Dijon mustard, ketchup, Worcestershire sauce, dry mustard, garlic, ginger, balsamic vinegar, and thyme. Place the pork loin in a large resealable bag or shallow dish. Pour the marinade over the pork, cover, and refrigerate for 24 hours, turning the meat occasionally for even flavor.

Step 2 – Roast the Pork

Preheat oven to 325°F (165°C). Remove pork from marinade and place it in a roasting pan. Discard the used marinade. Roast uncovered for about 20–25 minutes per pound, or until the internal temperature reaches 145°F (63°C).

Step 3 – Make the Cola Sauce

While the pork is roasting, prepare the sauce. In a saucepan, whisk together cornstarch and a splash of Coca-Cola to make a slurry. Add brown sugar, butter, dry mustard, remaining Coca-Cola, and balsamic vinegar. Bring to a simmer over medium heat, stirring until thickened and syrupy, about 5–7 minutes. Season with salt and pepper.

Step 4 – Baste for Flavor & Moisture

Halfway through roasting, spoon some of the cola sauce over the pork. Continue basting every 20 minutes until done. This creates that signature sticky, caramelized crust.

Step 5 – Rest & Serve

Remove the pork from the oven and let it rest for 10 minutes before slicing. Drizzle with extra cola sauce and serve.

Tips for Success

  • Marinate overnight – 24 hours gives the best flavor and tenderness.

  • Don’t skip the sauce – It’s what makes the pork so glossy and flavorful.

  • Check the temp – Overcooking can dry out pork loin; aim for 145°F and let it rest.

Serving Ideas

  • Pair with roasted potatoes or mashed sweet potatoes.

  • Serve with sautéed green beans or a fresh garden salad.

  • Add cornbread or buttermilk biscuits for a true Southern-style meal.
