Cranberry & Spinach Stuffed Chicken Breasts with Brie.

Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup fresh spinach, chopped
– 1/2 cup cranberries (fresh or dried)
– 1/2 cup Brie cheese, diced
– 1 tbsp olive oil
– 1 tsp garlic powder
– 1 tsp onion powder
– 1/2 tsp crushed red pepper flakes (optional)
– Salt & pepper to taste

Directions:
1. Preheat your oven to 375°F (190°C). Carefully slice a pocket into each chicken breast.
2. In a bowl, combine chopped spinach, cranberries, diced Brie, garlic powder, onion powder, crushed red pepper flakes (if using), and a pinch of salt and pepper. Mix well. Stuff this mixture into the pockets of the chicken breasts. If needed, secure the openings with toothpicks.
3. Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
4. Transfer the skillet to the oven and bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
5. Once cooked, remove the chicken from the oven, garnish with fresh parsley, and serve. Enjoy this delightful holiday treat!
