Garlic Parmesan Chicken Meatloaves

Ingredients:

1 lb ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 egg
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/4 cup milk
1/4 cup chopped fresh parsley
1/2 cup shredded mozzarella cheese
1/2 cup marinara sauce
Directions:

Preheat oven to 375°F (190°C). Lightly grease a muffin tin or baking sheet.
In a large bowl, mix ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, basil, salt, pepper, red pepper flakes, milk, and parsley until well combined.
Divide the mixture into six equal portions and shape them into mini meatloaves. Place them in the prepared muffin tin or on a baking sheet.
Bake for 20 minutes, then remove from the oven and top each meatloaf with a spoonful of marinara sauce and a sprinkle of mozzarella cheese.
Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and the internal temperature reaches 165°F (75°C).
Let rest for 5 minutes before serving. Garnish with additional parsley if desired.
