Grilled Sujuk with Tomato and Onion Salad

Ingredients:
For the Sujuk:
* 1 pound ground lamb or beef
* 1/2 cup chopped onion
* 1/4 cup chopped parsley
* 1 tablespoon ground cumin
* 1 teaspoon ground coriander
* 1 teaspoon ground black pepper
* 1/2 teaspoon red pepper flakes (adjust to taste)
* 1/4 teaspoon cinnamon
* 1/4 teaspoon allspice
* 1/4 teaspoon salt
* 1/4 cup olive oil
For the Tomato and Onion Salad:
* 2 large tomatoes, diced
* 1/2 red onion, diced
* 1/4 cup chopped fresh parsley
* 2 tablespoons olive oil
* 1 tablespoon lemon juice
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
Instructions:
Make the Sujuk:
* In a large bowl, combine the ground meat, onion, parsley, cumin, coriander, black pepper, red pepper flakes, cinnamon, allspice, and salt. Mix well until thoroughly combined.
* Divide the meat mixture into 4 equal portions and shape each portion into a sausage shape.
* Heat the olive oil in a large skillet over medium heat. Add the sausages and cook for 5-7 minutes per side, or until browned and cooked through.
* Remove the sausages from the skillet and set aside.
Make the Tomato and Onion Salad:
* In a medium bowl, combine the diced tomatoes, diced onion, and chopped parsley.
* Drizzle with olive oil, lemon juice, salt, and pepper. Toss to coat.
Serve:
* Place the grilled sausages on a serving platter and top with the tomato and onion salad. Serve immediately.
