Ingredients:
1 (14.75 oz) can of salmon, drained and flaked
1 small onion, finely chopped
1/4 cup breadcrumbs or crushed crackers
1 egg, beaten
1/4 cup all-purpose flour
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
1/2 teaspoon garlic powder (optional)
1/2 cup vegetable oil (for frying)
Instructions:
Prepare the Mixture
In a mixing bowl, combine the flaked salmon, onion, breadcrumbs (or crackers), beaten egg, salt, pepper, and any optional seasonings like parsley or garlic powder. Mix well until combined.
Form the Patties
Divide the mixture into 6-8 equal portions and shape them into round patties (about 1/2 inch thick).
Coat with Flour
Lightly coat each patty with all-purpose flour to help create a crispy crust during frying.
Heat the Oil
Heat the vegetable oil in a skillet over medium heat.
Fry the Patties
Fry the patties in the hot oil for 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the skillet—cook in batches if necessary.
Drain and Serve
Remove the patties from the skillet and place them on a plate lined with paper towels to absorb excess oil.
Serving Suggestions:
Serve the salmon patties hot with tartar sauce, lemon wedges, or a side of creamy coleslaw and cornbread.
