Ingredients:

• 1 box lemon cake mix (15.25 oz)

• 1/3 cup vegetable oil

• 2 large eggs

• 1 tbsp lemon zest (optional, for extra lemon flavor)

• Powdered sugar (for rolling, about 1/2 cup)

Instructions:

Step 1: Prepare the Dough

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the lemon cake mix, vegetable oil, eggs, and lemon zest (if using). Stir until smooth and well combined.

Step 2: Shape the Cookies

1. Scoop out 1-tablespoon-sized portions of dough and roll each portion into a ball.

2. Roll each dough ball in powdered sugar to coat generously.

Step 3: Bake

1. Place the coated dough balls onto the prepared baking sheet, about 2 inches apart.

2. Bake for 8-10 minutes, or until the edges are set and the tops are slightly crackled. Be careful not to overbake; they should remain soft.

3. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips:

• Extra Lemon Flavor: For a stronger lemon flavor, add 1-2 teaspoons of lemon juice to the dough or increase the lemon zest.

• Storage: Store in an airtight container for up to 5 days at room temperature.

• Make It Fancy: Drizzle with a simple lemon glaze made from powdered sugar and lemon juice for an added touch.
