Loaded Brownie Cheesecake Cup Recipe

🧁 Ingredients

For the Brownie Base:

1/2 cup (115g) unsalted butter

 

1/2 cup (100g) sugar

 

1/3 cup (40g) cocoa powder

 

1/2 tsp vanilla extract

 

1/4 tsp salt

 

1 egg

 

1/4 cup (30g) all-purpose flour

 

For the Cheesecake Filling:

8 oz (225g) cream cheese, softened

 

1/4 cup (50g) sugar

 

1 tsp vanilla extract

 

1 egg

 

For the Ganache (optional):

1/2 cup (85g) chocolate chips

 

1/4 cup (60ml) heavy cream

 

Toppings (choose your favorites):

Crushed Oreos

 

Mini chocolate chips

 

Caramel or fudge sauce

 

Whipped cream

 

Chopped nuts

 

👩‍🍳 Instructions

1. Preheat & Prepare

Preheat oven to 175°C (350°F). Line a muffin pan with paper liners or grease well.

 

2. Make the Brownie Layer

In a saucepan, melt butter. Remove from heat and stir in sugar, cocoa, vanilla, and salt.

 

Beat in the egg.

 

Stir in flour until just combined.

 

Spoon ~1 tbsp of brownie batter into each muffin cup and gently spread.

 

3. Make the Cheesecake Layer

In a bowl, beat cream cheese until smooth.

 

Add sugar, vanilla, and egg. Mix until creamy.

 

Spoon ~1½ tbsp of cheesecake mixture over the brownie layer in each cup.

 

4. Bake

Bake for 18–20 minutes, until the cheesecake is just set and doesn’t jiggle. Cool completely, then refrigerate for 1–2 hours.

 

5. Ganache (Optional)

Heat cream until hot (not boiling), then pour over chocolate chips.

 

Let sit 1 minute, then stir until smooth.

 

Spoon ganache over the chilled cups.

 

6. Decorate

Top with crushed Oreos, chocolate drizzle, whipped cream, nuts, or any topping of your choice.

 

🍽 Tips

For an extra loaded cup, press a mini Oreo or Reese’s cup into the brownie before baking.

 

Chill well before serving for the best texture.
