Pineapple Cucumber Salad

Ingredients

For the Salad:

1 large cucumber, thinly sliced

1 cup fresh pineapple, cut into small pieces

¼ cup red onion, finely chopped

Juice of one lemon

1 tablespoon olive oil

1 teaspoon honey (adjust the amount to taste)

Instructions

Prepare the Ingredients:
Slice the cucumber into thin rounds, cut the pineapple into small cubes, and finely chop the red onion.

Mix the Salad Ingredients:
In a large bowl, combine the cucumber, pineapple, and red onion.

Prepare the Dressing:
In a small bowl or jar, whisk together the lemon juice, olive oil, honey, red pepper flakes, salt, and black pepper until well combined.

Combine:
Pour the dressing over the salad ingredients and gently toss until the flavors are evenly distributed.
