Shrimp Scampi Bake

This Shrimp Scampi Bake takes the classic flavors of a beloved shrimp dish and elevates them into a rich, baked casserole. Succulent shrimp are bathed in a creamy, garlic-butter sauce and topped with a golden, bubbly layer of cheese. It’s an elegant yet simple meal that’s perfect for a special dinner or a comforting weeknight treat.

For the Shrimp Scampi:

Large shrimp, peeled and deveined 1 lb

Unsalted butter 2 tbsp

Olive oil 2 tbsp

Garlic, minced 4 cloves

Chicken broth ½ cup

Heavy cream ½ cup

Lemon juice 2–3 tbsp (from 1 lemon)

Lemon zest From 1 lemon

Dry white wine (optional) ¼ cup

Salt and pepper To taste

Red pepper flakes (optional) ¼ tsp

 

For the Baked Topping:

Shredded mozzarella cheese 1 cup

Grated Parmesan cheese ½ cup

Chopped fresh parsley ¼ cup

Step-by-Step Instructions

Preheat the Oven & Prep: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

Cook the Shrimp: Heat the butter and olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Add the shrimp to the skillet and cook for 2–3 minutes per side, until they are pink and opaque. Remove the shrimp from the skillet and set them aside.

Make the Sauce: In the same skillet, add the chicken broth, heavy cream, lemon juice, lemon zest, and white wine (if using). Stir to combine and simmer for 3–4 minutes, allowing the sauce to thicken slightly. Season with salt, pepper, and red pepper flakes (if desired).

Assemble the Bake: Return the cooked shrimp to the skillet and toss to coat them evenly in the sauce. Transfer the mixture to the prepared baking dish. In a small bowl, combine the mozzarella cheese, Parmesan cheese, and chopped fresh parsley. Sprinkle this mixture evenly over the top of the shrimp.

Bake: Bake for 10–12 minutes, or until the cheese is melted, bubbly, and lightly golden.

Garnish & Serve: Remove from the oven and sprinkle with extra chopped fresh parsley for garnish. Serve hot over pasta or rice, or with crusty bread on the side to soak up all the delicious sauce.
