Slow Cooker Cheesy Burger Flavored Soup  

 

Ingredients:

– 1 lb ground beef

– 1 medium onion, diced

– 2 cloves garlic, minced

– 4 cups beef broth

– 2 cups diced potatoes (about 2 medium potatoes)

– 1 cup frozen corn

– 1 cup shredded cheddar cheese

– 1 cup shredded mozzarella cheese

– 1/2 cup sour cream

– 1 tbsp Worcestershire sauce

– 1 tbsp ketchup

– 1 tsp mustard

– 1/2 tsp smoked paprika (optional)

– Salt and pepper, to taste

– 1 tbsp olive oil (for browning the beef)

– Chopped green onions (optional, for garnish)

– Crispy bacon bits (optional, for garnish)

 

Instructions:

1. Brown the Beef: Heat olive oil in a skillet over medium heat. Add ground beef, onion, and garlic. Cook until the beef is browned and the onion is softened. Drain excess fat.

2. Add to Slow Cooker: Transfer the beef mixture to a slow cooker. Add beef broth, potatoes, frozen corn, Worcestershire sauce, ketchup, mustard, smoked paprika, salt, and pepper. Stir to combine.

3. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until potatoes are tender.

4. Add Cheese: About 30 minutes before serving, stir in cheddar and mozzarella cheese. Let the cheese melt, stirring occasionally.

5. Finish with Sour Cream: Stir in sour cream just before serving for extra creaminess. Taste and adjust seasoning with salt and pepper if needed.

6. Serve: Ladle soup into bowls. Garnish with chopped green onions and crispy bacon bits if desired.
