Strawberry Crunch Cheesecake Bites

Ingredients
For the cheesecake filling
8 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping or whipped cream
For the crust and coating
1 cup graham cracker crumbs
4 tablespoons unsalted butter, melted
For the strawberry crunch topping
1/2 cup crushed vanilla cookies
2 to 3 tablespoons strawberry cookie crumbs or crushed freeze-dried strawberries
1 tablespoon melted butter
Method
In a bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Fold in the whipped topping gently until the mixture becomes light and fluffy. Place the mixture in the refrigerator for 30 to 45 minutes so it firms up slightly.
In a separate bowl, mix the graham cracker crumbs with the melted butter. Scoop small portions of the cheesecake mixture and shape them into bite-sized balls or short rounds. Roll the bottom or the whole bite lightly in the graham cracker mixture.
Mix the crushed vanilla cookies with the strawberry crumbs and melted butter to make the strawberry crunch topping. Gently press this mixture onto the tops or outer sides of the cheesecake bites.
Chill the bites in the refrigerator for at least 1 hour until firm, then serve cold.
Serving Tip
For a prettier finish, sprinkle a little extra strawberry crunch on top just before serving.
