Ingredients:
2 cups samp (soaked overnight)
4 cups water
1 cup milk or cream
1 cup chicken or vegetable broth (optional, for extra flavor)
2 tbsp butter
1 cup grated cheese (cheddar or your choice)
1 small onion, finely chopped
2 cloves garlic, minced
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp paprika (optional, for extra flavor)
Fresh parsley or chives for garnish
Instructions:
Prepare the Samp
Rinse the soaked samp under cold water and drain.
In a large pot, add the samp and 4 cups of water.
Bring to a boil, then reduce heat to low and let it simmer for about 1.5 to 2 hours, or until soft. Stir occasionally and add more water if needed.
Sauté the Aromatics
In a separate pan, melt butter over medium heat.
Add chopped onions and garlic, and sauté until soft and fragrant.
Make It Creamy
Once the samp is tender, add milk (or cream) and broth (if using).
Stir well and let it simmer for another 10-15 minutes, allowing it to thicken.
Add the Flavor
Season with salt, pepper, and paprika.
Stir in grated cheese until melted and well combined.
Final Touch & Serve
Remove from heat and garnish with fresh parsley or chives.
Serve warm as a side dish or a comforting meal on its own.
Tips for the Best Creamy Samp
For extra creaminess, use full-fat milk or double cream.
Add protein like bacon, chicken, or mushrooms for a heartier dish.
For a cheesy twist, mix in different types of cheese like mozzarella or gouda.
To make it vegan, replace dairy with coconut milk and use vegan butter.
