Ingredients:
1 lb (450g) ground beef
1 small onion, chopped
1 packet taco seasoning
1 cup salsa
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed (optional)
2 cups shredded cheddar cheese
1 cup crushed tortilla chips
1/2 cup sour cream
1/2 cup chopped tomatoes
1/2 cup shredded lettuce
1 jalapeño, sliced
Instructions:
Preheat oven to 375°F (190°C). Grease a baking dish.
Cook ground beef with chopped onion over medium heat until browned. Drain excess grease.
Add taco seasoning and salsa, mix well. Let it simmer for 5 minutes.
Layer the casserole in the dish:
Start with a layer of crushed tortilla chips.
Add the beef mixture.
Sprinkle corn and black beans.
Top with shredded cheese.
Bake for 15-20 minutes or until the cheese is melted and bubbly.
Garnish with sour cream, tomatoes, lettuce, and jalapeño slices.
Serve warm with extra tortilla chips or as a dip!
