Zucchini Ravioli

 

 

Ingredients:

• 4 large zucchinis

• 1 cup ricotta cheese (part-skim)

• 1/2 cup grated Parmesan cheese

• 1 egg

• 1 cup spinach, chopped

• 1/2 cup shredded mozzarella cheese

• 2 cups marinara sauce (sugar-free)

• Salt and pepper to taste

• Fresh basil for garnish

 

Instructions:

1. Preheat your oven to 375°F (190°C).

 

2. Slice the zucchini into thin strips using a vegetable peeler or mandoline slicer.

 

3. In a bowl, mix ricotta, Parmesan, egg, and spinach. Season with salt and pepper.

 

4. Lay two strips of zucchini crosswise and place a spoonful of the cheese mixture in the center.

 

5. Fold the zucchini over the filling to form the ravioli and place them seam-side down in a baking dish.

 

6. Pour marinara sauce over the ravioli and sprinkle with mozzarella cheese.

 

7. Bake for 20-25 minutes until the cheese is bubbly and golden.Garnish with fresh basil before serving.
