Banana Chia Honey Milk Pudding

Ingredients

For the Pudding:

  • 2 ripe bananas, mashed (about 1 cup)

  • ¼ cup chia seeds

  • 2 cups milk (dairy, almond, oat, or coconut milk)

  • 2-3 tablespoons honey (adjust to taste)

  • 1 teaspoon vanilla extract

  • ¼ teaspoon cinnamon (optional)

For Topping (Optional):

  • Sliced fresh bananas

  • Drizzle of honey

  • Toasted coconut flakes

  • Chopped walnuts or pecans

  • Fresh berries (strawberries, blueberries)

  • Granola for crunch


Instructions

Step 1: Mash the Bananas

In a medium bowl, mash the ripe bananas thoroughly with a fork until smooth with only small lumps remaining. The riper the bananas, the sweeter and more flavorful your pudding will be.

Step 2: Combine All Ingredients

Add the chia seeds, milk, honey, vanilla extract, and cinnamon (if using) to the mashed bananas. Whisk vigorously for about 1 minute to break up any clumps of chia seeds.

Step 3: Let It Rest

Let the mixture sit for 5 minutes, then whisk again. This second whisking prevents clumps and ensures the chia seeds are evenly distributed.

Step 4: Refrigerate

Cover the bowl with plastic wrap or transfer the mixture to individual jars or containers. Refrigerate for at least 2 hours, or overnight, until the pudding thickens to a creamy, gel-like consistency.

Step 5: Stir and Serve

Before serving, give the pudding a good stir. The chia seeds will have absorbed the liquid and created a thick, pudding-like texture. If it’s too thick, stir in a splash more milk. If too thin, add another tablespoon of chia seeds and refrigerate for another 30 minutes.

Step 6: Add Toppings

Top with sliced bananas, a drizzle of honey, toasted coconut, nuts, berries, or granola. Serve chilled.
