Malibu Pineapple Slush

Ingredients

  • 1 cup Malibu coconut rum

  • 2 cups frozen pineapple chunks

  • 1 cup pineapple juice

  • ½ cup cream of coconut (or coconut milk for lighter texture)

  • 2 tablespoons fresh lime juice (about 1 lime)

  • 2 cups ice cubes

  • Pineapple wedges and maraschino cherries for garnish (optional)

Optional add-ins:

  • 1 ripe banana for creamier texture

  • ½ cup orange juice for citrus twist

  • 1 oz simple syrup if you like it sweeter


Instructions

Step 1: Combine ingredients
Add Malibu rum, frozen pineapple chunks, pineapple juice, cream of coconut, lime juice, and ice cubes to a high-powered blender.

Step 2: Blend
Blend on high for 30-60 seconds until smooth and slushy. If it’s too thick, add a splash more pineapple juice or water. If it’s too thin, add more ice or frozen pineapple.

Step 3: Taste and adjust
Give it a taste. Want more coconut? Add a little more cream of coconut. Want more tang? Add extra lime juice.

Step 4: Serve
Pour into chilled glasses. Garnish with a pineapple wedge and a maraschino cherry. Add a colorful straw if desired.

Step 5: Enjoy immediately
This slush is best served right away before it melts.


Non-Alcoholic Version (Virgin Pina Colada Slush)

Replace the Malibu rum with:

  • ½ cup coconut water

  • ¼ teaspoon coconut extract


Tips

  • Freeze pineapple chunks ahead of time for the best slushy texture

  • Chill your glasses in the freezer for 10 minutes before serving

  • For a thicker slush, use less pineapple juice

  • For a thinner slush, add more juice or rum

  • Double the recipe for a party — this one goes fast


Variations

Malibu Berry Pineapple Slush: Add 1 cup frozen strawberries or mixed berries

Spicy Malibu Slush: Add a slice of fresh jalapeño before blending

Extra Creamy Version: Use frozen banana instead of ice

Tropical Triple: Add ½ cup orange juice and ½ cup mango chunks


Storage

This slush does not store well as it will melt and separate. For best results, make fresh and serve immediately. If you have leftovers, freeze them in an ice cube tray and re-blend later with a splash of pineapple juice.
