What Is Shoyu Chicken?

Directions

Slow Cooker Method (Set It and Forget It):

1. Combine the sauce. In a small bowl, whisk together the shoyu, brown sugar, water or broth, ginger, garlic, and scallions .

2. Layer in the slow cooker. Place the chicken thighs in the bottom of the slow cooker. Pour the sauce mixture over the top, making sure the chicken is well coated .

3. Cook. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the chicken is incredibly tender and practically falling off the bone.

4. Thicken the sauce (optional). If you prefer a thicker glaze, remove the chicken to a plate. Whisk the cornstarch slurry into the liquid in the slow cooker. Cover and cook on HIGH for 15-20 minutes until thickened . Return the chicken to the pot and toss to coat.

5. Serve. Garnish with fresh scallions and serve hot over steamed white rice.


Stovetop Method (Quick & Flavorful):

1. Sear the chicken (optional but recommended for flavor). Pat the chicken thighs dry with a paper towel. Heat a large skillet or Dutch oven over medium-high heat. Add the chicken skin-side down and cook until golden brown and crispy, about 8-10 minutes. Flip and brown the other side. Remove to a plate .

2. Make the sauce. In the same skillet, pour in the shoyu, brown sugar, water, ginger, garlic, and scallions. Scrape up any browned bits from the bottom of the pan. Bring to a simmer .

3. Simmer the chicken. Return the chicken to the skillet, skin-side up. Cover, reduce heat to low, and simmer for 35-45 minutes, flipping once halfway through . The chicken is done when it’s tender and cooked through.

4. Thicken the sauce (optional).Remove the chicken to a platter. Bring the sauce to a boil. Whisk in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes . Pour the sauce over the chicken.

5. Serve. Garnish with fresh scallions and serve with rice.

  • Use chicken thighs, not breasts.Thighs have more fat and collagen, which makes them incredibly moist and tender during long cooking . The skin adds flavor and can be crisped up under the broiler for a perfect finish .
