Ingredients:
1 cup (200g) unsalted butter, softened
1 cup (200g) granulated sugar
1/2 cup (100g) brown sugar, packed
2 large eggs
1 teaspoon (5ml) vanilla extract
2 1/4 cups (280g) all-purpose flour
1 teaspoon (5g) baking soda
1/2 teaspoon (2.5g) salt
1 cup (175g) semi-sweet chocolate chips
1 cup (100g) graham cracker crumbs
2 cups (200g) mini marshmallows
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in eggs one at a time, then stir in vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
6. Fold in chocolate chips and graham cracker crumbs.
7. Spread half the cookie dough evenly in the prepared baking pan.
8. Sprinkle mini marshmallows evenly over the dough layer.
9. Drop remaining cookie dough by spoonfuls over the marshmallows, spreading gently to cover most of the surface.
10. Bake for 25-30 minutes until golden brown and set.
11. Let cool completely in pan before cutting into bars.
